HAPPY VALENTINE'S DAY!
I hope that all of you are off to a good start today. Harper and I (and all of NYC) had an unexpected twist of events yesterday. You know, when the weather man says it's going to snow 5-7 inches and then the snow starts coming down and you think, "Oh NO! This is NOT going to be JUST 7 inches!"? Yeah. That happened. But we were able to have a fun day inside! When Harper's little brother took his afternoon nap, we baked a strawberry cake for her preschool Valentine Party that took place this morning. We really winged it on the cake and it actually turned out pretty good! I couldn't believe it. Too bad I didn't take a picture of it (it was yummy but not exactly aesthetically pleasing). HA! But I will post the recipe below!
Today, for Valentine's Day, Harper's lunch is in an EasyLunchboxes container. She has cherry tomatoes and XO Trader Joe's Cinnamon Schoolbook Cookies over red pepper slices in Kitchen Supplies Silicone Baking Cups. She also has turkey rolls with super cute candy food picks I purchased from All Things for Sale and cherry tomatoes. For fruit, she has a strawberry heart and raspberries with white chocolate chips in the center. She also has Blue Diamond Almond thin crackers.
1 box of white cake mix
1/4 cup of applesauce
1 cup of water
1 10oz bag of frozen strawberries
Preheat oven to 350°F. Thaw strawberries under hot water and cut in quarters (you'll want some chunks). In a big bowl, combine the cake mix, eggs, applesauce and water until batter is smooth. Mix strawberries in batter. Pour batter into a greased 13x9 glass cake pan making sure the strawberry pieces are evenly distributed throughout pan. Place in oven and bake for 28 minutes. Let cake cool and garnish with sprinkles. Enjoy!
